        From a Milan trattoria with too much attitude but excellent rice.

 

Follow the Risotto Basic Steps then..

Stir into your rice at the last minute several tablespoons of lightly whipped cream, along with minced parsley and grated dry jack or parmesan cheese.

Follow the Risotto Basic Steps then… 

Gently sauté 2 small sliced mushrooms with a little finely grated carrot, several tablespoons of chopped raw spinach and a few shreds of prosciutto, capping all with a pinch of nutmeg. Add these items to the rice at the last minute along with the ever-necessary grated cheese.

Follow the Risotto Basic Steps then…

Fry some oblongs of thick cut or slab bacon and add them — or the juniper berries — to the rice at the last minute along with some cooked shrimp: figure on about 10 bacon “bits” per serving and at least 3 tablespoons of shrimp. Adding grated cheese goes without saying.
